Tom started his career in Manila in 1991 returning to Ireland in 1999. He worked in Raffles Hotel in Singapore, The Dorchester in London and spent almost 2 years in Australia in a variety of 5* hotel kitchens and fine dining restaurants and also overseeing banqueting kitchens.
He has spent over 16 years in Limerick as an Executive Chef currently in the Limerick Strand Hotel. During this time he has had numerous appearances on TV, Radio and in hospitality publications. He has recently been nominated as one of Fáilte Irelands Food Champions and he a member of Eurotoques Ireland. Together with his team, he takes great pride in serving the finest quality of Irish and international cuisine, with an emphasis on fresh, local, seasonal produce.
This year we are delighted to welcome him back home to Éigse 2018.
